Last night, after a weekend of playing piano at events, I found myself in the kitchen thinking of something to whip up for dinner, so I made an old standby recipe with a variation.
This is delicious and easy to make with ingredients that you probably already have in your own kitchen...
For this sauce, the quantities are not crucial. Adjust as needed. Adjust the ingredients themselves if you desire. Go crazy. That's what cooking is all about...
Pasta with Tuna Tomato & Red Pepper Sauce
(serves 4 to 6)
Use a large saucepan over medium/medium high heat.
Add ingredients in the following order:
3 onions sliced and sautéed in olive oil until translucent
3 cans tuna in olive oil
1/2 bottle white wine
1 jar roasted red peppers puréed
1 jar anchovies puréed
1/2 to 1 jar tomato sauce
1 jar Trader Joe's red pepper spread
Cook over medium heat, stirring occasionally, then simmer, for about 30 minutes.
While the sauce is simmering, cook 1 pound of linguine or similar pasta.
Reserve 1/2 cup of water from cooking the pasta, and toss with the pasta and sauce.

Great tuna tomato recipe Anders. Just as a note of clarification: Your dad used to stay with me in Washington, DC while still working on a project in Georgetown back in the early 1990s. I never got into the habit of keeping a stocked cupboard beyond good tea,pasta and Parmesan. Upon hearing one night that your dad was arriving imminently I tried to pull together a meal that was as hearty and delicious as anything I would receive at your house. Well the most I could cull from my meagre rations was a can of tuna, a can of tomatoes and an onion...the rest is history. Since then I have rarely stopped by your kitchen when there wasn't some variation of the sauce. You clearly have perfected my dinner in a pinch. Moira
